
LUBBOCK, Texas (KCBD) – More than 60 food establishments were inspected this week as Lubbock health inspectors checked to make sure they’re keeping clean – and keeping your family safe.
Here’s this week’s Top and Low Performers.
Rise N Shine Donuts at 8001 Quaker had 18 violations.
- A container of milk was sitting out at a temperature of 72 degrees. It must be 41 degrees or colder. Cooked potatoes were not cold enough.
- A knife was touching a box of gloves.
- A dirty, dry wiping cloth was on top of utensils.
- Two employees did not wash their hands between changing tasks and putting on gloves.
- An employee used their bare hands to turn off the faucet at the hand sink. A barrier, like a paper towel, must be used to prevent cross contamination.
- Cardboard was used as a liner on top of the oven.
- Paint was stored over beverage containers.
- A container of medicine balm was stored above a prep table.
- Two employees did not have their food handler certification.

- Accumulation of grease and food debris on top of oven.
- Accumulation of black residue on rack above three-compartment sink.
- Gasket coming off of door located on reach-in cooler in dry storage room.
- Accumulation of grease on door of hot warmer located behind service counter.
- Floor, located in dry storage room, is soiled with a brown residue and is sticky.
- Floor, located under three-compartment sink, is not smooth and easily cleanable.
- Cardboard lining floor under packages of bottled beverages located in dry storage room.
- Brown residue located on walls throughout facility.
According to the report must the violations were corrected while the inspector was there.
Aranda’s Taqueria at 4001 34th St. had 19 violations.
- Chicken was above the safe cold temperature of 41 degrees.
- Two large tubs of cooked beef were on a shelf without refrigeration. They were also not at the proper temperature.
- Raw bacon was stored above ready to eat items. Raw sausage was thawing on a wire rack above cooked sausage.
- There were items in the hand sinks. Hand sinks are for handwashing only to prevent cross-contamination.
- A hand sink and the sink in the men’s bathroom were not plumbed correctly.
- Multiple knives were dirty.
- A spray bottle with bleach was not labeled.
- A bottle of unlabeled cough medicine was on a shelf above a prep table.
- There were no food handler certificates available for the employees.

- One unlidded drink was present on a counter above food storage.
- Multiple foods throughout the facility were stored in containers on the floor.
- Two packages of raw frozen sausage were thawing at room temperature on a storage cart. PIC stated they were thawing for less than one hour. The surface temperature of the package 58°F.
- A large block of menudo was thawing in a tub of stagnant water on the floor. The coldest part of the menudo measured 41°F, the warmest 60°F. PIC stated it had been out less than 2 hours.
- Cleaned utensil used for mashing was stored by hanging from the circuit breaker box door, which was not clean.
- A bowl used as a scoop for a bulk container of masa had no handle, and therefore the handle was not stored above the product.
- A box of single-use cups and a box of to-go containers were both stored on the floor in the south dry storage area.
- Metal pans were stacked wet, liquid stuck between dishes tested at 0ppm Chlorine solution.
- Bulk storage containers of white powder, which PIC identified as flour, were unlabeled.
- Multiple, various personal items were stored throughout the kitchen area above food storage and preparation areas.
The report shows most of the violations were corrected at the time of the inspection.
Texas Trail inside the Stripes at 5802 98th St. had 20 violations.
- Raw chorizo and raw chicken fajitas were stored above liquid eggs.
- Multiple items including shredded beef, chicken, sliced ham and refried beans did not have a date mark or were improperly date marked.
- An employee handled their personal food and other items with gloved hands and then continued food service without washing their hands.
- There were no paper towels at a hand sink.
- A box of gloves was next to toxic items.
- A metal dicer and a can opener were dirty.
- A silicone food brush was washed but not sanitized.
- Several food service items were cracked, broken or melted.
The inspector notes due to the number and the nature of the violations food safety knowledge was not demonstrated.

- An unlidded personal drink was stored on the prep table next to the microwave, and over boxes of food service gloves.
- Employee with gloved hands grabbed a cookie and was eating it as she grabbed a clean spatula, and a box of salt, then returned to cooking area.
- Clean utensils were stored to airdry inside the 3rd compartment of the 3-compartment sink, while soiled dishes were inside the 1st compartment, and rinsing of other wares was taking place in the 2nd compartment.
- White bulk beans with rice and beans were not labeled.
- Clean utensils, and containers had visibly stickers not removed at ware wash.
- A not-in-current-use mop was stored inside the mop bucket with visibly soiled water in the prep area.
- Personal items (jacket, backpack, food, drinks) were stored on prep table over food service gloves in the back prep area.
Most of the violations were corrected while the inspector was there.
