Yield joins forces with Mythology, aiming to partner great food and spirits

Scott Yeates’ passion for creating great-tasting spirits drove his efforts to create Mythology Distillery in 2018. Now he believes that same top quality can be found in food from the provider he has partnered with at two Steamboat Springs locations.

“Before this we were running the food,” Yeates said Monday. “But we wanted to focus on making whiskey, gin and vodka. We want to focus on creating experiences and cocktails — food was never really our thing.”

Yeates partnered with Bryan Baker this spring to create Yield@Mythology and provide the food for Mythology Distillery’s two Steamboat Springs locations.

Baker moved his business out of The Commons Food Hall this spring and started offering his menu at the Mythology Distillery main campus a few weeks ago. Baker will also offer a menu at Mythology’s mountainside location when it opens for the season June 26.

“Scott (Yeates) and I’ve been talking about doing something for a while now, and the timing just never really was there,” Baker said. “It was neat to finally have it all line up for us.”

He said Yield@Mythology will carry over much of its current menu, offering a smash burger made with beef from Snowden Meats, wraps and salads using locally grown produce from Mountain Bluebird and Elkstone Farms in Steamboat and bread from Bred.

He also plans to offer appetizers, as well as salads and other items that will feature the flavors of Mythology’s gins, vodkas and whiskeys.

“We call it farm to counter, because we started with a counter,” Baker said. “We always think about locally sourced ingredients whenever we’re ordering food or creating dishes. We try to have a simple, lean menu that offers those core items.”

He said that when a local producer has something unique to offer, Yield has always worked to make it special.

“We will offer good burgers, wraps, salad and appetizers,” Baker said. “There will be some good shareable food, and Mythology always had a good charcuterie board so we kind of just piggybacked off of that and added some of our own little touches to it.”

Yeates’ hope is that Baker’s passion for food will match his desire to produce great spirits.

In 2021, Yeates moved Mythology Distillery’s base of operations from Denver to Steamboat. The company continued to produce it spirits and maintain a tasting room in Denver as it transitioned operations to the former site of the Butcherknife Brewing Company. Yeates opened Mythology’s new campus in June 2023. Mythology Distillery has been in business for seven years this summer.

Yield@Mythology will offer food daily noon-8 p.m. at the Mythology Distillery Campus located at 2875 Elk River Road. The Mythology Distillery Campus garden and tasting room remains open for spirits and cocktails until 10 p.m. Friday and Saturday.

The Mythology Mountainside location at 1874 Ski Time Square plans to serve food and cocktails noon-8 p.m. Thursday through Sunday once it opens.

“Everyone loves coming out here for the outdoor experience and the cocktails and we have always had food that’s been decent,” Yeates said. “But now people can actually come here for the food and be really excited about it.”
