Lehigh Valley food safety report: Rodent droppings, mystery meat, warm duck eggs

Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of April 27.

Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.

All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a list of FAQs.)

As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.

If a food provider is considered “out of compliance,” that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

  • Observed various reduced oxygen packaged (ROP) fish types and seafood thawing in reach in refrigerator without being removed from package to prevent the growth of Clostridium Botulinum and Listeria Monocytogenes. *Fish and Seafood items were removed from refrigerator and voluntarily disposed of during this inspection.
  • Observed preserved duck eggs with packaging requiring refrigeration being held at room temperature, in the store aisle, rather than 41° F or below as required per the label. *Eggs were removed from shelf and voluntarily disposed of during this inspection.
  • Observed various unlabeled packaged meats and seafood in reach in refrigerator and freezer not identifying the common name of the food item.
  • Observed food facility reduced oxygen packaging various types of fish and seafood, which has a potential for Clostridium Botulinum and Listeria monocytogenes, without documenting or monitoring a secondary food safety barrier. ROP food items are required to be frozen during the special process and items were not frozen at time of being sealed.
  • Observed the handwash sink near the reach in refrigerator and freezer not having single use towels, continuous towels, or air-drying device available to dry hands.
  • Observed food facility lining rear reach in refrigerator shelving with single use newspaper, an absorbent material not easy to clean.
  • Food facility does not employ a certified food employee as required.
  • Observed a buildup of static dust and dirt on the fan guards in the walk-in freezer in need of cleaning.

  • Cold water is leaking from beneath sink at handwash sink in kitchen. Repair leak.
