Food for Thought: 29 violations at this week’s low performer

LUBBOCK, Texas (KCBD) – One low performer and one at the top in this week’s Food for Thought.

Hibachi Express at 4409 114th St. had 29 violations.

  • Three pans of wontons in the walk-in freezer were contaminated with ice condensation.
  • Multiple items were stored in a way to could cause cross contamination, including: raw chicken and raw beef over raw shrimp, raw shrimp and raw eggs above ready-to-eat veggies, and raw chicken above raw beef.
  • There was a brown residue in the soda nozzles of a clear liquid.
  • An employee did not wash their hands after eating and then prepared a sushi roll.
  • An employee took a drink and medication and then prepared food without washing their hands.
  • A bottle of prescription medication was stored above a prep table.
  • A hand sink was blocked.
  • There was a scrubber in a hand sink. Hand sinks are for hand washing only to prevent cross-contamination.
  • The inspector notes, due to the number and the nature of the violations management did not show food safety knowledge.

  • Employee drinking for an unlidded drink and taking a prescription medicine at back prep table.
  • A wet in-use cloth not in immediate use stored on prep surface of sushi station.
  • Three containers of ginger stored on floor of sushi station.
  • An in-use scoop used in the bulk salt container stored with handle in contact with the salt in dry storage area.
  • Wares on shelf above 3-compartment sink in ware wash are wet stacked.
  • Employee personal drinks stored on prep table by cook line.
  • Employee personal grapes stored on prep area of sushi station.
  • Employee personal coat and drinks stored above bulk rice and single-use forks.
  • Wet mop not in immediate use stored in mop bucket at mop sink in a position that does not allow air drying.
  • Employee personal drinks and prescription medication stored on shelf above back prep area.
  • Follow-up date changed (rear entry door)
  • Accumulation of ice buildup in walk-in freezer. Wontons are contaminated by this ice build up.
  • Vent hood filter baffles have an accumulation of grease build up on them.
  • Walk-in cooler (non-food contact surfaces not clean).

The report shows most of the violations were corrected at the time of the inspection.
