Food Crush: Taqueria 27’s P.B.L.T.A Taco

In case you missed the Food Crush series, I talk about my favorite dishes. Ones worth making that special trip. They are unique, or the perfect version of a classic, or just so damn good that they live in my brain and pop up with regularity. Just like a crush, I can’t quite get the dish off my mind.

Taqueria 27 isn’t a traditional taqueria in any sense of the word. I LOVE a good local taco cart with all the favorites (lengua, anyone?). I would never discount the Lord’s work they are doing. But I am not always a strict traditionalist when it comes to taco stuffings. I believe that a tortilla is a vehicle for delivering delicious ingredients to mouth. And so T27 is one more venue for that to happen. While they have an entire cadre of specialty tacos (duck confit, turkey chorizo, grilled pears + roasted beets), my favorite combines east and southwest in their P.B.L.T.A taco ($11.99 for 2). The abbreviation stands for pork belly, lettuce, tomato, and avocado. It’s like a BLT married Ramen-style pork belly and had a little taco baby dressed in jalapeño aioli instead of plain mayo with a little sliced avocado. 

The pork belly at Taqueria 27 is smoked in-house, cut extra thick, and fried on the griddle to crispy/piping-hot perfection. Cherry tomatoes add a nice little acidic burst, and the spicy aioli is both spicy and cooling. For some reason, the soft flour tortilla blanket makes it all the better. No corn tortillas for this one. 

I am on record for loving the T27 hot sauces. When I sit down, I always ask for all three (habanero, agua chile, chile morado). But if you like heat, the carrot-orange habanero hot sauce is the perfect choice for the P.B.L.T.A taco specifically. You can add a few splashes; if you are like me, you will slather it on every bite.

Taqueria 27 also has a new fusion-y taco for the heat lovers out there, a Bacon-wrapped jalapeño taco ($13.99 for 2) with ‘cheesy flour tortillas filled with carne asada and sliced bacon-wrapped jalapeño poppers. Drizzled with jalapeño aioli, lettuce, pico de gallo, and avocado.’ It is in the running for a second food crush.  And if you are into creating your OWN taco mix tape, get the carne asada tacos with the roasted beets. The rich asada and the earthy beets make for a unique combination.
