
LUBBOCK, Texas (KCBD) – Every week health inspectors check the safety and cleanliness of Lubbock kitchens. This week, we have one low performer and two on top.
Garcia’s Mexican Restaurant at 5604 Slide had 28 violations
- Raw ground beef, salsa, diced tomatoes and butter were above the safe cold temperature of 41 degrees.
- Raw ground beef patties were stored above raw eggs.
- The deflector plate in the ice machine was dirty.
- Two mops and mop buckets were blocking a hand sink.
- There were no proper towels at a hand sink.
- Wiping towels were in another hand sink. Hand sinks are for hand washing only to prevent cross contamination.
- Cutting boards near the steam table has burn marks and deep cuts in them.
- Unlidded drinks were stored on the prep table with tea urns in the prep area.
- Containers of bulk bin salt, pepper, and other spices stored in the food prep area were not covered.
- Staff preparing chips at the fryer had chip container not stored 6 inches above the floor.
- Smaller uncovered bowls with salsa are stored on trays that are stacked.
- Grill scraper was stored on a trash can between uses.
- All three hand sinks in the kitchen were not sealed to the wall to protect from seepage.
- Single-service foam cups are being used to store salt, pepper, and another seasoning in the refill caddies for the dispensing into the table service containers.
- Fryer basket handles are being wrapped with single-service plastic wrap by staff.
- Single-service cream containers are being reused for food storage in the food prep.
- Smaller bulk seasoning containers stored on a cart do not have labels to identify the common name of the food.
- Food storage and clean dish storage racks were visibly soiled.
- The silverware holder next to the tea urns was visibly soiled.
- Seasoning refill caddies were visibly soiled.
- Carts with food storage are visibly soiled.
- Two, not-in-current-use mops are stored inside the mop buckets between uses.
- Personal items (food, purse, cups) stored on prep table over boxes of single-service straws in the drink station area.
- Walls and ceiling areas are visibly soiled with dust and grease.
- A hole in the wall by the steam table, the wall next to the 3-compartment sink is visibly damaged, and a ceiling tile is damaged by the back door.
- Open gallon container of milk had a manufacturer’s use-by-date of 6-18-2025.
The report shows most of the violations were corrected while the inspector was there.
