The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

SAM’S SOUTHERN EATERY, 1704 E Harding Ave. Date of inspection June 16. Observed containers of food in the dry storage and coolers being stored uncovered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Containers of food were covered during the inspection. Shrimp and fish (47 degrees F) in the prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed sticky fly traps being used in prep area. Insect control devices are designed to retain the insect within the device, not be located over a food prep area and in a manner that prevents dead insects and insect fragments from getting into food, equipment, utensils, and linens and unwrapped single-service and single-use articles. Fly traps were removed and discarded during the inspection. Observed several insects in the facility. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions.

RICE FIRST CLASS CATERING – RESTAURANT, 5535 Sulphur Springs Road. Date of inspection June 16. Observed wiping (cloth) laying on counter top. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Observed counter top with an accumulation of food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

DUB BRASSELL ADULT DETENTION, 300 E. Second Ave. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed boxes of milk cartons being stored on the floor of the walk in cooler. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination an dat least 6 inches above the floor. Boxes of milk were moved off of the floor during the inspection.

COLONIAL STEAK HOUSE, 111 W. Eighth Ave. Date of inspection June 16. Single service items observed in establishment being reused. Single service containers should not be reused. Observed an accumulation of debris on the floors and walls by the cooking equipment. Clean the physical facilities as often as necessary to keep them clean.

CHARROS, 2500 Olive St. Date of inspection June 17. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Chlorine reading 0ppm after wash in the automatic dishwasher. A chlorine solution shall measure 50- 100 mg/L at a temperature of 75°F-100°F. Dishes should be sanitized in the three compartment sink until the automatic dishwasher can be repaired. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use.
