Again-these pumps are not made for TCS Foods since the mechanism is not refrigerated to maintain foods at 41°F or less. The pumps were removed on site and lids and scoops placed for use instead. You cannot use these pumps-you must use the method above until another unit is supplied to dispense the dressings at 41°F or less. Submit a spec sheet of the proposed unit for review and approval before purchased.

Food ingredient storage containers (squeeze bottles and dry goods), were missing labels with the common name of the food. Label all food ingredient storage containers today. Time/Temperature Controlled for Safety (TCS) ready-to-eat food (moo milk * cone mix) prepared in the food facility and held for more than 24 hours, located in the front prep top and walk-in cooler, were not date marked. Milk and mix were discarded during the inspection. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Facility needs to deep all floors, walls, shelves, and exteriors of equipment. Including inside scoop wells and ceiling tiles collecting debris by washer and dryer. No sign or poster posted at the right-side handwash sink in the serving area to remind food employees to wash their hands. Post sign. Scoop handles touching food in several dry good and toppings bins. Keep handles up and away from food. Use scoops only. Mops are not being hung to air dry. Back exit door to the outside is being propped open. Observed food buckets stored directly on the floor in the back kitchen, rather than 6 inches off of the floor as required. PIC stated that the cheese sticks were just placed into the individual lunch bags, and placed in the walk in cooler that was just cleaned. The cheese sticks were placed into another refrigerator, if the walk-in cooler does not go down to 41 degrees, it will need to be repaired. Walk-in cooler did not have any other TCS items in it at the time. Test strips were expired from oct 2021. Obtain new Quat test strips. Ceiling tiles in the kitchen is not durable, smooth, non-porous, non-absorbent. All of the ceiling tiles in the kitchen must be replaced with smooth, non-absorbent, easily cleanable ceiling. Please email [email protected] the specification of the ceiling tiles that will be installed. The table top can opener appears to be rusty on the blade, replace with a new one.

During the inspection the dented canned items were removed to be discarded. Ensure to check all canned items for dents. The floor in the walk in cooler and is not durable, smooth, non-porous, non-absorbent. Reseal the floor so that it is smooth, non-porous and easily cleanable. Chicken was 50F and noodles were 100F. Proper cooling was reviewed. Foods were placed on shallow tray and left loosely covered in refrigeration to cool. Review proper cooling with staff. Foods must cool from 135F to 70F within 2 hours, then from 70F to 41F within 4 more hours. Use your thermometer to monitor cooling foods. Cooked noodles and other ready to eat foods must be date labeled with date made. Left sushi display is was 45F. Fish in unit was 43-50F. All foods were removed. Do not store food in this display until it is repaired and can maintain foods at 41F or less. Squeeze bottles of sauces at the sushi station must be kept in refrigeration not on the counter. Bottles were placed in bain marie during inspection. Observed raw meats & fish stored above ready to eat foods in the kitchen main maries. Never store raw meats over ready to eat foods. Foods were re-arranged during inspection. Pans of food that are covered with plastic wrap or no wrap at all are being staked in bain maries. Do not stack pans unless they have solid lids. Wooden table used in basement for making shrimp phyllo is not cleanable. Replace this table with an NSF listed stainless steel table and cutting board. Squeeze bottles throughout the facility were not labeled. Bottles must be labeled with the common name of the bottle contents. Garlic and oil at the wok station was not time marked to ensure it is used or discarded within 4 hours. This is a repeat violation. Failure to keep time tracking on this food will result in it being required to be kept in refrigeration. Basement – clean both restrooms and supply soap to Men’s restroom. Two door refrigerator at sushi station – replace the torn door gaskets.

Keep the area in front of hand sinks clean and easily accessible for staff. The food facility does not maintain Certified Food Manager records as required. Obtain your Certified Chester County Food Manager certificate. PIC is enrolled in a class currently. The battery for the soap dispenser was broke and soap was not available at the handwash sink in the back area. Replace the batteries immediately. Cherries that require refrigeration after opening were sitting at room temperature. The cherries were discarded on site. Ensure to keep the cherries refrigerated once opened. Clean inside the water ice chest freezers in the front serving area. The floor in the front serving area is in disrepair, replace.

Stonewall Links, 375 Bulltown Rd., Elverson, June 5. Fail. In Main kitchen, facility is conducting reduced oxygen packaging (ROP) of chicken, beef and fish. However, facility does not have approval to do this specialized process as no formal HACCP plan has been submitted to or approved by CCHD. Discard all foods within facility-conducted ROP packaging. Discontinue ROP and remove equipment. Contact CCHD for info pertaining to submitting a HACCP plan for ROP. Clean and sanitize the following: – all ice scoops and caddys in all food service areas – all can openers in all foood service areas. A new bar is under construction in the main building. Excessive dust was observed in the dining room and adjacent areas as the side-wall tarps blocking off the construction area were not down at time of inspection. Wings were removed from the cooking process during the start of the inspection and were immediately placed on pans for cooling. Wings were cooled at room temperature for approximately an hour then placed in walk-in refrigerator for final cooling. Wings must be fully cooked to 165°F prior to serving. Proper cooling procedures were reviewed. Shelves in the walk-in refrigerator were observed dirty from food residue. Clean within 48 hours. Several raw animal foods were stored above ready to eat foods in the refrigerator located below the grill. This was corrected during the inspection. Par cooked wings were observed placed in cardboard boxes. These boxes are not approved for this use. Wings were placed on metal food grade pans during inspection. Floor in the walk-in refrigerator is damaged. Repair/replace within 30 days. Floor outside of walk-in refrigerator was observed with a few damaged and/or missing floor tiles. Repair within 30 days. Squeeze bottle was observed damaged. This was discarded during the inspection. New squeeze bottles are available. Most of the food was properly dated, however, lunch meat opened but not sliced was not dated. This was corrected during the inspection. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. They were not iced properly-pans of the cups were resting on top of ice in a pan below. All pans of dressings must be buried in the ice as high as the food level. This was explained and corrected on site. Be certain not to place the dressings too high in the containers. If icing cannot hold them at 41°F then another commercial grade refrigerator must be purchased for use. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Facility has a certified food manager who is not on site frequently. Facility must have a full-time certified food manager to help prevent potential food safety hazards. Provide invoice for certified food manager test. Observed chopped cabbage stored in a plastic shopping bag. Food must be stored in a food safe storage container to help prevent potential contamination. Cabbage was discarded during inspection by person in charge. Observed wet wiping cloths stored on the prep top next to the cutting board as opposed to in a sanitizer bucket to prevent potential pathogen growth on the cloths. Store wet wiping cloths in sanitizer bucket at 50-100ppm (bleach/chlorine). The stock pots used for cooking in the food truck are too big to fit in the 3-compartment sink and be properly washed, rinsed, and sanitized. Facility must utilize the commissary 3-compartment sink for warewashing large equipment. Observed a knife stored between the prep top and wall. This is an area that is not easily cleanable or sanitized. Utensils must be stored elsewhere. Person in charge washed, rinsed, and sanitized knife during inspection. Food truck doors and windows open during inspection. Screens must be installed if it gets too hot in the food truck to prevent pests from potentially entering the facility. Observed food cooling at room temperature (par cooked chicken 85F, and lentil soup 115F), which is not a proper cooling temperature. Food must be cooled from 135F to 41F or below within 6 hours to prevent potential pathogen growth. Food must be cooled uncovered in a walk-in fridge, or in an ice bath, or with an ice wand. The food was discarded by person in charge during inspection. Food facility has insufficient cooling equipment to cool foods quickly within the 6 hours required. The equipment in the food truck (small prep top and small undercounter cooler) are not designed to quickly cool large quantities of hot food. Facility must utilize one of the two commissaries walk-in refrigeration units for properly cooling food. Observed tin foil and paper towels lining shelves in the facility. This can easily break or become soiled. Another material must be used that is solid, non-absorbent, and easily cleanable. In cold meat prep room, the following ceiling deficiencies were observed: – rusted and peeling drop ceiling tile tracks – moldy ceiling tiles Replace/refinish damaged ceiling tracks. Clean and/or replace damaged ceiling tiles. Note: all ceiling tiles must be vinyl-faced in this area. Replace all stained and damaged ceiling tiles in the retail areas. In the walk-in refrigerator of the deli, clean the following: – floor – ceiling. White coated ceiling panels in the walk-in meat refrigerator (specifically above the meat grinding station) are peeling, rusting and in poor repair, thus risking contamination to exposed foods below. Install new ceiling panels/refinish ceiling in this area.

This was relocated on-site. Handwashing sink must be easily accessible by staff at all times. Facility prepares Caesar dressing in house using raw eggs. Place the consumer advisory on packaging and on the menu. Ensure asterisk or similar are used after each menu item to disclose which items the reminder statement applies to. In the walk-in refrigerator, cut turkey and chipotle mayo (made on-site) not properly date marked. This was corrected on-site. Temperature-controlled for safety foods prepared on-site, then packaged must also be labeled “Keep refrigerated”. Provide quat test strips for monitoring the concentration of sanitizer at the 3-compartment sink.

Today ice cream pops were being made while raw meats and other foods were being prepped nearby. The space is too small to continue both operations in the kitchen. By June 30th all ice cream/ice pop making must be relocated to store front next door. No soap was supplied to the serving area hand sink. Soap must be supplied at all times. Soap supplied during inspection. Pan of meat was sitting on table. Temp was 41F. It was reported that the meat would be portioned into bags. Staff was busy doing various other things at the time. Foods must be kept in refrigeration if not being work on. Cheese bag in cheese hot holding dispenser was not dated with date opened. You must date the bag and use within 7 days of opening. Mayo and burger sauce were not stored in refrigerator. Both were over 45F. Both were discarded. Keep these squeeze bottles in refrigeration. Hand sink was blocked again. A purse and lids were in the sink. The sink is not convenient for use as it’s squeezed in next to the ice machine. Within 30 days – move ice machine against wall and move hand sink where ice machine was located. It must be easily accessible to staff.
