Coolers not working in 1 restaurant inspection failure; more than 40 food trucks pass

UNSATISFACTORY INSPECTIONS

Critical violations: Approximately five pounds of cooked rice and beans temped at 55 degrees in large double-door reach-in cooler. Operator states it was cooked the previous night. Ambient temperature of this cooler was 55 degrees (corrected – voluntarily discarded.

Four beef patties were temped at 60 degrees in (different) large single-door reach-in cooler. Operator states they were cooked the previous night (corrected – voluntarily discarded; raw chicken and raw ox tails prepared approximately one hour prior moved to properly working coolers; coolers not to be used for potentially hazardous foods until repairs are done).

Violations: Some reach-in coolers lack easily accessible thermometers.

Bottom portion of low reach-in cooler has food debris, not clean. Exterior portion of tall reach-in freezer has grease accumulation along door and handle surfaces.

Back door open with no barrier for pest prevention (corrected – screen door closed).
