Refrigerator was at 45° rather than 41° or below as required. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The handwash sink in the kitchen area was blocked and not accessible at all times for employee use. Food items ingredient storage containers, in the stock room, is not labeled with the common name of the food. The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required. A Food Employee was observed washing their hands at the 3 bay warewash sink rather than the designated handwash sink. An insect control device located in the kitchen area with potential to contaminate food, equipment, and / or utensils. The food facility does not have the original certificate for the certified food employee posted in public food. The food facility does not maintain Food Employee Certification records as required. Several food items, a potentially hazardous ready to eat food requiring datemarking, in the kitchen area, was not date marked. Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins.

Can opener not cleaned and does not allow to be cleaned. Air duct in the bathrooms need cleaned or filters changed. Observed deeply scored cutting boards not resurfaced or discarded as required. Observed toxic material, not clearly labeled with a manufacturer’s label. Floor in the produce area, is made of *, and is not durable, smooth, non-porous, non-absorbent. Needs replaced. Exterior door located in the rear of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.

Rutters Store 72, 4498 Lincoln W. Way Saint Thomas, April 21. Pass. The top shelf to the dirty dish cart, a non-food contact surface in the dish area, has a crevice that does not facilitate cleaning and maintenance. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed many shelves, walls in the dish area, underneath and bottom of the fryers and in the wall/floor junctions throughout the facility accumulation of dirt and soil. Observed clean wok pans stored in a container with food debris and miscellaneous equipment in the bottom. Sliced tomatoes were held at 54°F, in the sandwich cold holding, rather than 41°F or below as required. Facility discarded and replaced the tomatoes, new temperature 39.2°F. Observed food containers that had sticker residue on them, that were nested contaminating the food contact surface of another container. Educated facility to sanitize food contact surfaces prior to use. The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required. Thermometers for ensuring proper food temperatures are not calibrated and/or functioning properly. The yellow, digital thermometers used to verify reheating temperatures are not being calibrated.
