
BLOOMINGTON, Minn. (KARE) – Customers who go to Nickelodeon Universe at Mall of America will see plenty of familiar cartoon characters alongside a brand new one.
A cartoon version exists at the Coaster Cafe of Edyn Esparza, a 14-year-old who is the youngest food vendor at the mall.
It all began when Edyn’s parents, Enrico and Sharon Esparza, saw a talent for baking in her when she was 3 years old.
By the time she was 5, she was making baking videos.
By 8, she was selling cupcakes at a car dealership.
Edyn’s favorite mode of transportation, however, was at the mall: the carousel.
Edyn eventually left a voicemail at the mall selling herself and her talents.
That call got her in touch with food manager Barb Ross-Hayes.
“How wild is it that an 11-year-old girl cold calls the Mall of America to see if she can sell her product here,” Ross-Hayes said.
About as wild as Edyn making a pitch in a Mall of America board room.
However, it’s not simple to start delivering hundreds of cake pops to a megamall; Edyn needed a commercial kitchen.
Her parents helped her find and rent one.
Edyn also needed a commercial license. She said she studied for hours every day to prepare herself for an online test, which she took at age 13.
Edyn’s older brother Ethan Esparza helped her out. Ethan Esparza is a successful businessman in his own right, first being featured in a story from 2007 selling lemonade. He now owns his own real estate business.
“I want to be like him, I want to be an entrepreneur,” Edyn said.
Edyn is now hot on her brother’s tail.
“I’m happy that people are loving it,” she said.
Edyn’s Cake Pops launched in February to rave reviews, the perfect start of a career for a little girl with amusement park-sized dreams.
