These 2 new Springfield restaurants offer their own takes on Mexican food

This week in 417 food news, two Mexican concepts open their respective doors and a Chinese restaurant opens its third Ozarks location.

Mexican fusion restaurant Show Me Chuy now open

Show Me Chuy, 1410 E. Republic Road, is now open for walk-in customers. The Italian-Mexican fusion restaurant had its ribbon cutting on March 31, according to a Facebook post.

The restaurant will open at 4 p.m. and serve dinner for walk-ins starting April 4. Starting April 7, it will open for lunch at 11 a.m. and be open until 9 p.m. Monday through Thursday, and until 10 p.m. Friday and Saturday. Show Me Chuy will start serving its regular Sunday brunch — which runs from 9 a.m. to 2 p.m. — on April 13.

The restaurant is run by Jesus “Chuy” Garcia. Garcia is the brother of Tony Garcia, who opened Avanzare in 2002.

Triple Eights opens third location in Ozarks

Triple Eights now has a third location in the Ozarks at 1313 W. Kearney St. in Springfield. The new spot, which opened March 28, is open from 10:30 a.m. to 9 p.m. daily.

Triple Eights has two other locations: 1710 S. Kansas Expressway in Springfield and 557 E. Elm St. in Republic.

Luna Modern Mexican restaurant opens

Luna Modern Mexican is now open at 2925 E. Battlefield Road. The restaurant opened March 31 and “re-imagines traditional Mexican cuisine by taking a modern approach” and using locally sourced ingredients, according to its Facebook page.

It’ll be open daily from 11 a.m. to 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday and 11 a.m. to 8:30 p.m. Sunday.

The restaurant was formerly Catrina’s Modern Mexican.
