One of the absolute most luxurious experiences at this year’s Pebble Beach Food & Wine festival is A Rare Moment in Time: A Luxurious French Dinner — hosted by Max Boonthanakit, Markus Glocker, Philip Tessier, Laurent Tourondel, and Laura Werlin with Louis XIII pours — it’s $1,250 per ticket and there’s only 20 seats. What makes this truly one of the most exclusive events, is the fact that for only the third time in history, Louis XIII Cellar Master Baptiste Loiseau has uncovered the third milestone in the Rare Cask legacy, and one of 750 bottles produced will be presented.
Of course, since it’s a French dinner, the evening begins with a welcome glass of Champagne Telmont Reserve de la Terre and guests will enjoy generous pours of wines from the prestigious Louis Jadot that will delightfully complement each course throughout dinner. Then there’s the Rare Cask that will end the evening with a bang as the dinner’s final toast.

Bringing the dishes of this epic dinner to life are chefs Max Boonthanakit, of Michelin-starred Camphor, who is known for his refined techniques and modern interpretations of classic French dishes; Markus Glocker, who is celebrated for his exceptional work at Bâtard and is recognized for his intricate and bold flavors; Philip Tessier, a two-time James Beard Foundation Award nominee, that will be showcasing his expertise in French techniques, with a focus on seasonal ingredients; Laurent Tourondel, a Food & Wine Best New Chef and who’s created his BLT restaurant empire, that blends French traditions with modern American influences; and Laura Werlin, a James Beard Award-winning author that will highlight the richness of artisan cheeses (which pair exceedingly well with Champagne) and ending the evening’s meal with an exquisite cheese course.

At Camphor, Boonthanakit takes classic French techniques and dishes and gives them a fresh, modern perspective and he can’t wait to bring that energy to Pebble Beach Food & Wine, alongside the rest of the esteemed group. “I’ll be kicking off the evening with a Canapé with Gougere, Comte, and Truffle — simple, elegant, and packed with flavor — followed by a Crudo of Toro and Scallop with Horseradish Cream and Green Apple, a dish balancing richness and brightness,” says Boonthanakit.
