Food employee personal belongings, coats, backpacks, sweaters, etc., observed laying on food for the business, although hooks are provided for hanging attire. Observed spray deodorant stored on boxes of deli paper above the hand-wash sink.

Little Caesars, 1643 Lincoln Highway East, Lancaster, Feb. 20. Pass. Observed dough prep machine, nonfood contact surface sitting on cardboard, an absorbent and rough material. Dough mixer, a food contact surface, was observed to have food residue on underside of lid and hinge and was not clean to sight and touch. Observed fan guards in walk in cooler area with an accumulation of dust and debris.

The person in charge failed to control access to food facility by unauthorized persons. Observed chipping and peeling paint on the wall next to the fruit toppings in the front service area, risking possible physical contamination of food. Observed single-service, single-use articles (cups) stored in back food preparation area directly on the floor, and not 6 inches above the floor. Food facility does not employ a certified food employee as required. Food facility does not employ a certified food manager, hence no posting of a certificate. Paper towel dispenser empty at the hand-wash sink in the front service area. No sign or poster posted at the hand-wash sink in the women’s room to remind food employees to wash their hands.

Blue Pacific Sushi & Grill, 1500 Oregon Pike, Lancaster, Feb. 19. Pass. Food utensils in the food preparation area observed stored in a container of water, which is not maintained at 135 F. Observed a box of tuna in reduced oxygen packaging, thawing in unopened packages in the walk-in cooler. Observed old food residue on three cleavers stored as clean. Observed static dust and carbon buildup on the fume hoods. Observed a black, greasy buildup on the faucets in the wok area. Employee personal items, pills were observed in the dishwashing area and not stored in dressing rooms or identified storage area as required. Food facility was not calibrating pH meter prior to taking pH of sushi rice. Facility does not have the instructions for calibration of the pH meter and was unable to calibrate. The facility will use time in lieu for the sushi rice.

The food facility does not have a certified food employee, hence, no posting of a certificate; repeat violation, Nov. 20, 2024.

New Beijing, 2350 N. Reading Road, Unit 9, Denver, change of owner, Feb. 19. Pass. Raw chicken was stored above other foods in the walk in box. Three bay sink observed with build up oily residue and not cleaned before use, and frequently throughout the day. Faucet at hand-wash sink in prep area severely corroded and not easily cleaned.

Procopio’s Pizza and Subs, 2525 N. Reading Road, Denver, Feb. 19. Pass. Sliced deli meat, a refrigerated, ready-to-eat, time/temperature-control-for-safety food in the walk-in box, was date-marked by the facility but was beyond the seven-day use- or sell-by date and requires discarding; voluntarily discarded. Observed clean food equipment and/or utensils in prep area stored wet in a manner that does not allow for draining and/or air-drying (wet-nesting); removed for cleaning. The light in the warewashing area is not functioning at least 20 foot candles.

Reel Cinemas, 1500 Christopher Way, Lancaster, follow-up, Feb. 19. Pass. The food facility does not maintain food employee certification records as required. Food facility has an employee who held a certified food manager certificate; however, the certificate has expired and is no longer valid. Facility has 90 days to enroll an employee in a certified food manager course.

Amishview Inn & Suites, 3125 Old Philadelphia Pike, Bird-in-Hand, Feb. 18. Pass. An employee’s open beverage container (twist-cap variety) was observed on a food preparation table; corrected.

Arby’s No. 7074, 888 E. Main St., Ephrata, Feb. 18. Pass. Observed two cases of vanilla frozen dessert mix and two cases of iceberg lettuce stored directly on the floor in the walk-in cooler rather than 6 inches off of the floor as required. Frozen dessert vanilla mix was held at 50 F. Frozen dessert machine was shut down and will not be used until machine is serviced/repaired. Person in charge is to contact this inspector when unit is repaired before frozen dessert service begins. Frozen dessert machine is not operating properly and holding a temperature of 41 F or below. The quaternary ammonia concentration in the sanitizing solution of the three-bay ware wash sink was 50 ppm, rather than 200 ppm as stated on the manufacturer’s use directions. Sink compartment was drained and new quat was filled in third bay. Final residual was tested at 200 ppm. Flooring throughout entire kitchen is slick/greasy and needs to be mopped/cleaned. Observed a buildup of static dust on the ceiling surface above food products in the walk-in cooler.

Boba Cha, 100 Park City Center, 6115, Lancaster, Feb. 18. Pass. Food stored in the food prep area open with no covering. The hand-wash sink in the food prep area was blocked by utensils and not accessible at all times for employee use.

Bowmansville Travel Plaza, 1350 Reading Turnpike, Bowmansville Road, Bowmansville, Feb. 18. Pass. Three-compartment sink observed with buildup of oily residue and not cleaned before use, and frequently throughout the day. Assorted containers on the drying shelf were observed to have food residue and were not clean to sight and touch; items were removed for cleaning.

Observed 50-pound bag of durum wheat stored on the floor (and not 6 inches above as required) of dry stock room, as well as being open with no covering; corrected. Observed several sauces, dressings and condiments in squeeze bottles at pizza prep station that were not labelled. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Observed a moderate amount of static dust and carbon on filters of hood vent over DFF station.

The Pizza House, 253 N. Reading Road, Ephrata, Feb. 18. Pass. Tomato sauce and meatballs were held between 109 F and 115 F in the steam table rather than 135 F or above as required. Meatballs and sauce were reheated to 165 F and placed back into the steam table for hot hold. Food was within the 4-hour time and temperature danger zone; corrected on site.
