
LUBBOCK, Texas (KCBD) – Two national chains cooked up a perfect score, and a newcomer to Lubbock food scene makes a repeat appearance at the bottom.
Sushi Nami at 5015 Milwaukee had 33 violations.
- Time/temperature controls were not being followed. This is for foods that require strict temperature and time controls to prevent bacterial growth and foodborne illnesses.
- The standard operating procedure was not being followed for acidified sushi rice. Essentially, this means the proper procedures to ensure the preparation and safety of sushi rice were not being implemented.
- Several foods were stored in a way that could cause cross contamination: raw whole beef was above vegetables; raw chicken was above raw beef, and raw eggs were above ready-to-eat veggies.
- There was sticker residue on food containers.
- Spray bottles were not labeled.
- The blade of a can opener was heavily soiled.
- Hand sinks were being used as dump sinks.
- There were no paper towels at two of the four hand washing stations in the sushi prep area.
- The handle of a pan had soiled plastic wrap around it.
- A mixture used to acidify sushi rice was not in a proper container.

- Side door to facility had a gap in the door sweep that would allow for pest entry.
- Wet wiping cloth, not in immediate use, was stored outside of a sanitizer bucket.
- Frozen tempura battered items were stored in a container that was placed directly on the ground.
- Frozen raw pork ribs were stored in a box that was placed directly on the floor in the walk in freezer.
- Cleaned plates were stacked wet in a manner that did not allow for proper air drying.
- Plastic container without a handle was stored in a container of cornstarch.
- Cleaned containers were stacked wet above the three compartment sink in a manner that did not allow for proper air drying.
- Cleaned cups were stacked wet in a manner that did not allow for proper air drying.
- Cleaned tableware was handled by employees such that bare hands came into contact with the food contact surface of the utensils.
- Storage containers for sauces did not have a label to identify the contents.
- Curtains partitioning the dining room from the wait staff drink stations have visible accumulation of food residue on the fabric. No employees were observed pushing carts with food into the curtains at the time of inspection and PIC stated that all employees have been trained on how to move food through the curtain partition without contaminating food.
- Splash guards were added to hand sinks at sushi prep station. However the top of the splash guards are covered in black tape as the employees stated it was too sharp and they were becoming injured.
- Sticker residue was present on the nonfood-contact surface of cleaned containers.
- Main dumpster outside facility had heavy visible accumulation of grease leaking out of the container into the parking lot. See photograph attached to facility for reference to violation. No grease appeared to have reached a storm drain or to be a violation of storm water City ordinances.
- Employee personal drink was stored on the drying rack next to clean items.
- Employee meal stored with food items in the prep area.
- Employee personal drink was stored on a prep table in the raw item prep area.
- Employee personal drinks were stored on a utensil storage rack with cleaned utensils.
- Wet mop, not in immediate use, was stored with the mop head directly in the mop sink in a manner that did not allow for proper air drying.
- Bare unsealed wood near both soda dispensing machines at the wait service drink stations. This violation was recorded in December and they had 90 days to comply, the compliance deadline has not yet occurred.
