Havana good time: This Cuban food truck brings bold flavors on wheels to Panama City Beach

  • Rios’ Cuban sandwiches are inspired by her grandfather’s traditional pig roasts.
  • The Rollin Cuban uses fresh bread from La Segunda bakery in Tampa and sources its meat from Miami.

Jackie Rios and her “Rollin Cuban” family served up dishes inspired by her grandfather’s Miami roasting days during Panama City Beach’s Food Truck & Craft Beer Festival Feb. 8-9.

Growing up, Rios said she watched her grandfather meticulously roast pigs over cinder blocks, mastering the balance between seasoning and slow-cooking.

That passion for cooking has carried over to her food truck, where she and her family take pride in delivering high-quality, flavorful Cuban sandwiches.

A key element of her menu is the freshly baked bread sourced from La Segunda bakery in Tampa. “It’s the first place in the United States to make authentic Cuban bread,” Rios said.

And to complement her genuine Cuban bread, she sources the meat from Miami, aka Little Cuba.
