Bellingham West Chester Dining Room, 1615 E. Boot Rd. West Chester, Follow-up, January 31. Pass. Ice build-up in walk-in freezer. Do not store foods below ice build-up while repairs are pending. Wall panel loose in center column in main kitchen by dry good bins. Repair. Evidence of leak in large dry storage room in corner to the left of doors that exit to the back of the building. Ensure there are no leaks and clean.

Capt’n Chucky’s Crab Cake Co., LLC @ WAFM, 1165 Wilmington Pike, West Chester, January 31. Fail. An employee was observed handling money then food without handwash between. Inform/remind staff of proper handwashing procedures and comply every day. Employee with Band-Aids on hands must wear gloves when working with exposed foods. Speed rack of foods in the walk-in refrigerator must be date marked with the prepared on/pulled on dates. Provide ingredient listings to packages of bacon-wrapped scallops and Humpty Dumplings Take Homies in the customer grab-and-go freezers. Store employee personal belongings and foods in separate, designated areas away from food and equipment for the facility.

Casa Carmen Farm & Vineyard, 378 Hoods Ln. West Grove, January 31. Pass. Observed numerous TCS commercially processed ready-to-eat foods & TCS ready-to-eat foods prepared in the facility beyond the 7 day datemarking requirement. These foods were removed from the unit for personal consumption during the inspection. Do not sell or offer these foods to the public. TCS ready-to-eat foods whether commercially processed or prepared in the facility must be consumed or discarded within 7 days. Comply at all times. Observed cloth towels lining the inside bottom of the Artic Air bain marie. The cloth towels were removed from this unit during the inspection- corrected onsite. Do not use cloth towels to line the bottom of the bain marie as this is not a cleanable and durable surface. In addition, cloth towels may promote bacteria growth. In addition, the concrete floor in the kitchen and bar areas is in the need of resealing. The floor appears to be absorbing moisture in the vicinity of the dishwasher. Seal floor to be smooth, durable, easily cleanable and non-absorbent. Submit proposed floor sealant specifications for review prior to sealing floor. Correct by 4/30/25. Food facility is reusing single-use food storage containers which are intended to be a single-service or single-use article. Discard all single-use food storage containers and obtain food grade storage containers. Observed personal foods stored in the Artic Air bain marie. All personal foods were removed from this unit during the inspection. Do not store personal foods in equipment intended for food service operations. New food facility in operation more than 90 days has not applied for a Chester County Certified Food Manager Certificate as required. Complete and remit provided CFM Application.

Honey Brook Youth Center, 4610 Horseshoe Pike, Honey Brook, Opening, January 31. Pass. A residential dishwasher was observed on-site but not connected to plumbing. It was reported that it is not used and there is no indication that it has been used. Remove within 2 weeks. This facility does not currently have a certified food manager, however, it was reported that several people are enrolled in a certified food manager class. One person must become registered with Chester County Health Department within 90 days.

Iccara Pizza, 691 W. Kings Highway, Coatesville, January 31. Pass. Facility made some changes and old mop/utility sink may not be used as a mop/utility sink from this point forward, due to food prep area. Facility must convert current mop/utility sink to a handwashing sink and provide a new mop/utility sink in another location. Correct within 60 days. Dump wastewater in toilet until new mop/utility sink is installed.

J&R’s Bakery @ WAFM, 1165 Wilmington Pike, West Chester, January 31. Fail. Food Employee did not follow proper handwashing procedure. Food employee did not wash hands for adequate amount of time, al least 20 seconds. Also, employees must wash hands between glove changes. Food Employees eating in prep area as evidenced by observed partially consumed food near prep table. Food ingredient storage containers, in the prep area, is not labeled with the common name of the food. Also, in the back storage area, label designated food storage locations. Sanitizer buckets in both the donut and at the 3-compartment sink, found to have soap and sanitizer mixed. These buckets are for sanitizer solution only. Empty and refill with only sanitizer solution. Clean the following: Floor under the rack in front of mechanical dishmachine; Floor of the walk-in freezer. The flooring in front of the mechanical dishmachine and near the ovens is beginning to wear. Resurface.

Panaderia Estrella Bakery DBA Deisys Cake Shop, 315 W. State St. Kennett Square, January 31. Pass. Display case was 50F. TCS foods were 47-50 degrees F. All were discarded. Thermostat was lowered and case temperature came down to 39 degrees F. Ensure case maintains foods at 41 degrees F or less. Flan and Tres Leches cake in the grab and go case were not date labeled. Ensure these are dated to expire 7 days from date made. Product was date marked during inspection. Back room hand sink was filled with a silverware holder. Cannot store items in this sink. It must available for dishwashing staff to wash hands. Items were removed during inspection.

Perfect Brew Coffee House @ Penn Medicine SCC, 455 Woodview Rd. West Grove, January 31. Pass. Observed pre-cooked chicken thawing in standing water at room temperature, which is not an approved thawing method. Chicken was thawing to make chicken salad. Chicken was thawed within time/temperature parameters to initiate proper cooling after food preparation. Cool to less than 41 degrees F within 6 hours. Ensure proper thawing in accordance with the following requirements: quick thawed in the cooking process: thawed in refrigeration at 41 degrees F or less; submerge food under running water at 70 degrees F or lower. Never let the food temperature exceed 41 degrees F for longer than 4 hours. Observed ambient temperature of True bain marie at 38-39 degrees F, however, some foods stored in the bottom portion of this unit were observed with an internal temperature >41 degrees F: chicken salad 467 degrees F; Tuna fish 54 degrees F; sliced turkey 46 degrees F. The above noted foods were discarded during the inspection. Ensure foods are not left out at room temperature for extended periods of time and keep top lid covered during pauses in operation. Monitor internal temperature of food and equipment to ensure foods are maintained at safe temperatures. Observed cooked pasta and opened commercially processed muffin mix not being datemarked. These foods were datemarked during the inspection. Ensure consistent date marking of all TCS ready-to-foods.

Primo Hoagies, 1280 Baltimore Pike, Toughkenamon, January 31. Pass. Move cases/pallets of soda bottles away from the back hand sink. These must be stored 6 inches of the floor and cannot block the handsink or get splashed from handwashing. Clean the floor under the 3 bay sink and the shelving across from it. Pay special attention the floor/wall junction. CFM certificate expired today. Ensure class attendance within 30 days to obtain a new certificate or at least one other employee must attend class within 30 days.

Raku Hibachi & Sushi Inc., 348 Commons Rd. Parkesburg, January 31. Fail. A knife was observed stored between table and refrigerator. Do not store knives between equipment. Knife was taken to dishwasher to be cleaned during inspection. Knives were placed on magnetic knife rack prior to cleaning. Knives were removed and taken to dishwasher and knife rack was cleaned during inspection. Large Bain Maire refrigerator located near cooking line was observed at 50 degrees F, rather than 41 degrees F or below as required. All potentially hazardous food was discarded during the inspection and repair company was called. Do not use until repaired. Time and temperature are used for parasite destruction for salmon used for sushi. Temperature of freezer was observed at -4 degrees F and salmon must be dated and kept for 7 days. Some salmon was observed without dates. Date all salmon not dated and keep for 7 days. Correct immediately. The following equipment was observed dirty from food splash, dust and/or hand contact: Squeeze bottles used for sauces; Dry storage containers near grill; Walk-in refrigerator shelves; Shelves inside and door handles on Turbo air 2 door refrigerator located near walk-in refrigerator; Ice machine inside where ice is made. Clean and maintain within 24 hours. The following non-food contact surfaces/areas were observed dirty from food debris or food splash: Next to Hibachi grills in dining rooms; Small metal carts in kitchen; Shelves under prep tables; Sides of deep fryers and equipment next to fryers. Clean within 3 days. Clean floor throughout kitchen including under equipment. Correct within 48 hours. Clean floor under waiter/waitress drink station. Correct within 48 hours. Lid for grease trap located in the floor was cracked. Replace lid within 14 days.

Shine Nutrition West Chester LLC DBA Shine Nutrition Downingtown, 3927 Lincoln E. Highway, Downingtown, January 31. Pass. No violations.

Snap Custom Pizza, 291 Main St. Exton, Follow-up, January 31. Pass. Cheese (ricotta, feta, bleu) and cut tomato were held at 51 degrees F, in the left-side pizza toppings area, rather than 41 degrees F or below as required. Toppings were placed in incorrect pans and unit did not get to temperature before placing foods inside. Pans were replaced and toppings were measured at 41 degrees F.

Sovana Bistro, 696 Unionville Rd. Kennett Square, January 31. Pass. Bar: Dipper well for utensils was not on. Maintain on during service and at sufficient velocity of water to flush particulates to the drain. Bar: Juices made in the facility not properly iced in the bins. Juices had just been placed in the unit. Maintain 7 days prior. Foods must be properly date marked and used or discarded within seven days of preparation. When TCS foods are frozen and thawed, those dates must also be marked on the containers. In the warewashing area of the main kitchen, inverted crates observed being used. This is not an easily cleanable surface. Provide shelving and/or dunnage racks or relocate. Tabletop fryer is not under a cooking exhaust hood. A heavy accumulation of grease observed on surfaces surrounding the fryer. Relocate the fryer to location under the cooking exhaust hood or remove from facility. Bar: Replace the small portable cutting board. Clean the following: Ceiling and wall in main dish machine area; Clean ceiling in wait station area; Underside of shelves on the cook line by the tabletop fryer. Label sanitizer buckets/containers. This was corrected on-site. Maintain. Bakery & 2nd Floor Prep Area: At the 3-compartment sinks, the concentration of chlorine sanitizer observed >200ppm. Sanitizer label indicates concentration up to 200ppm. Make all necessary adjustments. Ensure test strips are used routinely to monitor concentration. Until repairs are made to the dispenser, steramine tablets will be used-test strips available.

Two Birds Cafe, 653 Downingtown Pike, West Chester, Follow-up, January 31. Pass. Time in lieu of temperature being used in the food facility to control ready to eat Time/Temperature Controlled for Safety (TCS) foods without written procedures or documentation to verify disposition of food. Product was voluntarily discarded. Facility will be providing written documents to CCHD for approval.

Wasabi 5, 450 W. Lincoln Highway, Exton, Follow-up, January 31. Pass. Raw lobster was stored above ready to eat foods in the cook line prep top. Lobster was relocated during the inspection. Raw salmon was stored above ready to eat foods in the sushi cooler. Salmon was relocated during the inspection. Storage of raw fish was addressed with staff during the inspection. Observed food bucket stored directly next to mop sink where is it subject to splashing. Bucket was relocated during the inspection. Observed two single-use food containers that were washed and re-used. Containers were discarded. After original product is emptied, container must be discarded.

Aramark @ Pennwood Elementary School, 1470 Johnny’s Way, West Chester, January 30. Fail. An employee observed eating in the kitchen area. Employees food and beverages must be consumed in designated areas. This was corrected on-site. The water temperature of the wash compartment of the manual warewashing equipment was

Aramark @ Westtown-Thornbury Elementary School, 750 Westbourne Rd. Westtown, January 30. Pass. Two spray bottles of sanitizer observed unlabeled. This was corrected on-site. Maintain all spray bottles labeled with the contents.

California Tortilla, 284 Main St. Suite K2-a, Exton, Follow-up, January 30. Pass. The food facility does not employ a certified employee as required. An employee has attended an approved training class, but has not applied for Chester County Health Department Certification. Apply within 1 week.

Capriotti’s, 827 W. Baltimore Pike, Suite 2, West Grove, Complaint, January 30. Fail. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed excessive dust accumulation on ceiling tiles, ceiling vents & light shields throughout the facility. Clean all of the above noted areas and maintain in a clean and sanitary condition at all times. The posted Chester County Certified Food Manager Certificate expired on 11/30/24. An existing employee has reportedly completed a food manager course. Complete and remit provided Certified Food Manager Application along with a copy of your food manager certificate and a fee of $40.

The Cottage School, 8 Whissell Dr. Coatesville, January 30. Fail. Food dispensing utensil in dry food observed stored in the food and not with handle above the top of the food and the container. Discontinue use of single-use bowls/cups as scoops. Scoops must have handles and be stored with handle above the top of the food and the container. Facility is washing and re-using single-use containers for food storage, utensils, and chemical storage. Also observed non-food grade utensils and food storage containers being used by the facility. Food equipment must be food-grade/commercial. Discard all single-use containers that were washed and re-used. Replace with food grade containers and equipment. The water temperature of the wash compartment of the manual warewashing equipment was 102 degrees F, rather than not less than 110 degrees F, as required. Repair/adjust to reach 110 degrees F as required. The handwash sink in the kitchen was blocked by gallon jugs stored inside sink and not accessible at all times for employee use. This is the only handwashing sink in the kitchen and must be easily accessible at all times. Handwashing sinks are to be used for handwashing only. Working containers above 3 compartment sink, used for storing a chemical/cleaner taken from bulk supplies, were not marked with the common name of the chemical. Label all chemical bottles. The food facility does not employ a certified employee as required. An employee has attended an approved training class, but has not applied for Chester County Health Department Certification.

Jersey Mike’s Subs (JMPA West Chester Pa LLC), 323 E. Gay St. West Chester, Follow-up, January 30. Fail. Observed wet wiping cloths in prep area, not being stored in sanitizer solution. Store all in use wiping clothes in sanitizer solution and test at a frequency that it maintains the proper PPM. Observed frozen food stored in walk in freezer area, covered in ice. Fix broken freezer and clean all ice build up. Door of walk-in cooler is not self-closing. Door needs to be repaired within two weeks so that it is self-closing to maintain temperature of TCS foods. Walk in freezer has a leak and is dripping water that is then freezing onto boxes of foods. Put in a work order to ensure unit is functioning properly. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean walls with dust build up; clean ceilings with dust build up; clean light fixtures with dust build up; clean behind and underneath all equipment; interior of deli case needs a thorough cleaning. The handwash sink for employees located in the register area, is not convenient and easily accessible, as evidenced by the observed lack of proper handwashing by employees. Facility must purchase smaller rack or remove current rack that pick-up orders get stored on so that hand wash sink can be accessed. This needs to be done immediately. The handwash sink in the sandwich prep area being used as a food preparation sink as evidenced by observed peppers and various other foods in the sink. Discontinue use for anything other than hand washing.

Midway Grill, 3235 E. Lincoln Highway, Thorndale, January 30. Pass. Repair the leak at the soda machine. Clean the following: floor/wall juncture under the prep table and adjacent shelving by the buffalo chopper; Ceiling in front of the hood; Wall next to and behind ice machine. In the kitchen, repair the missing floor tile under the prep sink table. Replace the broken pallet that the exterior grease collection container is on. Maintain in clean condition.

Mod Super Fast Pizza, LLC, 1090 E. Lancaster Ave. Downingtown, Follow-up, January 30. Pass. No violations.

Okinii Sushi & Hibachi, 3818 W. Lincoln Highway, Thorndale, Follow-up, January 30. Pass. In the walk in, raw meats were stored over vegetables, which could allow meat to drip onto foods and food containers. Corrected on site: Walk in was rearranged so that all raw meats were in one area away from ready-to-eat foods. The dishwasher trays have a buildup of grime and need to be cleaned or replaced. Provide proof of the dishwasher trays being cleaned or replaced within 1 week. The outside grease containers are being stored on dirt, which is absorbent. Within a week, provide proof that the grease containers were moved to a non-absorbent surface, such as the parking lot asphalt.

On The Border Mexican Grill & Cantina, 102 Bartlett Ave. Exton, Follow-up, January 30. Pass. No violations.

Ron’s Schoolhouse Grille, 74 E. Uwchlan Ave. Lionville, January 30. Pass. Deli meats were not sitting in containers in the sandwich bain marie. Make sure foods are in containers to prevent contamination. Plastic food storage containers were observed to be cracking and broken. Facility is in the process of replacing these containers with metal Complete by the next inspection. Walk in 1 fan screen was observed to be dirty. Clean fan screen and maintain. Food scraps observed in the cold line handwash. Handwash sinks should be used only for handwashing. Clean and sanitize sinks and dispose of food in the trash can. Handle of Grill bain was a fabric shoe string. Chef removed shoe string immediately. Make sure handle is made of smooth, and easily cleanable material. Two lights out on the main cookline hood and one light out in the pizza hood. Replace these lights within 1 week.

Saimart, 444 W. Lincoln Highway, Coatesville, January 30. Pass. Milk for coffee was set out at room temperature for customer use. This was discarded during the inspection. Milk must be kept at 45 degrees F or below as required. Correct immediately. Slushy machine was observed not working but still contained syrup. Contents were emptied during the inspection. Remove, repair, or replace slushy machine within 30 days. Downstair storage area and old walk-in refrigerator in the back storage area were observed cluttered. Clean, organize, and remove all unused equipment within 30 days.

Southbound BBQ Co. Commissary @ Elk’s Club of West Chester, 401 W. Washington St. West Chester, January 30. Pass. Filters and grease extracting equipment in the hood cannot be cleaned in place and is not easily removable. New baffles need to be installed, and all grease build up must be cleaned professionally, with-in two weeks. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration Sample provided, for chlorine dish machine. Purchase more. Four Cutting boards, a food contact surface, was observed to have food residue and was not clean to sight and touch. They also had deep groves rendering them uncleanable. Replace cutting boards. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed dirt and mold like growth on gaskets of freezer. Cleaned on site. Prep sink does not have an adequate air gap of at least 1 inch, between the water supply and flood rim of the sink. Have this fixed and sent photos of repairs. A working container of cleaner/degreaser was stored above or on the same shelf with food, equipment, in shelf area. Products was voluntarily removed and put with other chemicals.

The Pear, 275 Brinton’s Bridge Rd. West Chester, Follow-up, January 30. Pass. No violations.

Turks Head Cart – Lamont, Church St. West Chester, January 30. Fail. Food Employee did not follow proper handwashing procedure. Soap and/or warm water not used. At the time of inspection, hot water at the handwash sink was not working. Observed Employees drinking personal drinks. Without washing hands between customers. Observed wet wiping cloths in truck, not being stored in sanitizer solution. Soiled wet rag stored on expresso machine. In use rags need to be stored in sanitizer solution between use. Check the concentration of the sanitizer before putting rags in and change as often as needed to maintain proper concentration. The handwash sink located in the truck does not have water at a temperature of at least 85 degrees F. Person in charge was able to fix the hand sink to make bring it up to 100 degrees F. Create a daily checklist to make sure hand sinks work prior to operation.

Walmart #5795, 800 Commons Dr. Oxford, Complaint, January 30. Pass. No violations.

7-Eleven Store #2405-34670b, 103 N. Pottstown Pike, Exton, Follow-up, January 29. Fail. Foods stored inside cardboard boxes and at the end of the unit (where closest to warmth from the building) in the grab and go refrigeration unit were measured at 47 degrees F. Store foods closer to back of unit and do not store inside cardboard boxes as they are preventing air flow. Time/temperature controlled for safety foods must be maintained at 41 degrees F or below as required.

Amore Pizza & Pasta, 100 W. Schuylkill Rd. Pottstown, Follow-up, January 29. Pass. In the refrigerated drawers under the griddle, raw meats were stored over cooked meats. This could contaminate the cooked meats. Corrected on site: Raw meats were moved to the bottom drawer. Cooked chicken was left to cook on the counter and was measured at 63 degrees F, which is not an approved cooling method. Hot food must be cooled quickly in a cold-holding unit such as the walk in cooler. Food must be cooled from 135 degrees F to 70 degrees F with 2 hours, and to 41 degrees F within 6 hours total after being cooked. Corrected on site: Chicken was discarded. Prepackaged desserts were not labeled properly with the name of the product, ingredient statement including any major allergens, net weight, and the name and address of the store. Ingredient information was posted on the display cooler for several desserts, but some desserts did not have their ingredients displayed. By tomorrow, ingredient information must be posted on the display cooler for all desserts. By Feb. 15th, all individual packages must be fully labeled.

Applebee’s Neighborhood Grill & Bar, 3479 E. Lincoln Highway, Thorndale, January 29. Pass. Time/Temperature Controlled for Safety Foods cold held at greater than 41 degrees F for

Atexquita Mexican Restaurant, 505 E. Gay St. West Chester, Follow-up, January 29. Fail. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Many cooked food items in the walk in cooler area stored open with no covering. salsas, were not cooled from 135 degrees F to 70 degrees F in 2 hours and/or from 135 degrees F to 41 degrees F within 6 hours, after preparation. Product was changed to a different container as it would have not fallen to the correct temperature. Revisit cooling procedures, cool in metal pans with product no higher than 2 to 3 inches before transferring to smaller plastic containers. Time/Temperature Controlled for Safety (TCS) ready-to-eat food prepared in the food facility and held for more than 24 hours, located in the walk in and bain marie, is not being date marked. Revisit date marking and labeling procedures with all employees. Facility has all sanitizing agents. However, three compartment sinks were not filled as designed or required. Sanitizer and dish soap were filled in the same compartment. The water sink was filled with soap as well. Retrain staff on how to properly fill and test three comp sink. Must replace storage racks on the left side of the walk in cooler as it is uncleanable and has significant amount of rust. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean the following areas: all racks in the walk-in cooler; walls of walk-in coolers; behind all cooking equipment on the line; handles of refrigerated equipment. The lone handwash sink in the kitchen area was blocked by potted flowers and not accessible at all times for employee use. This handwash sink must be stocked and un-blocked at all times. Back door located in the back storage area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. The door itself is rusted out and probably needs to be completely replaced. A Restricted use pesticide is being applied in the food facility by a non-certified applicator. Remove all pest control chemicals. A Chester County Health Department Certified Food Manager is displayed, but the individual is no longer employed by the food establishment. Employee working in the facility must take approved food handling training. Also, must apply for Certified Food Manager with the CCHD after finishing training. During inspection, person in charge said that the current CFM no longer works for the company.

Carniceria Moroleon, 310 E. Baltimore Pike, West Grove, January 29. Pass. Food Facility Person in Charge not able to provide documentation that plain Choco Bananas, peanut covered Choco Bananas and Mangonada con Chamoy are from an approved source. These foods were removed from the sales floor. These foods may not be offered/sold to the public until proper documentation is provided verifying approved source information. Observed cilantro leaves in the hand sink located in the prepared foods service area. Clean and sanitize sink. Do not use hand sinks for food preparation. Hand sinks are for handwashing only.

Dunkin Donuts, 3907 Lincoln Highway, Downingtown, January 29. Pass. Corner of dumpster where drain is located has been damaged and is no longer leak proof as evidenced by the light coming through the hole. Open container of mushroom dark soy sauce observed stored at room temperature despite bottle reading “refrigerate after opening.” Discard this product and store new, opened product in refrigerator. In kitchen and sushi station, some squeeze bottles of food were not labeled with the common name of the food within. Provide labels. Cloths and paper towels were found in place to cover foods such as raw meat and produce. Discontinue this practice as only non-absorbent and food grade materials (foil, plastic wrap, lids) may be used to contact and cover foods. Provide vector-proof lid. Exterior doors in front, side and rear of facility are not protected against vector entry. Several exterior doors were found with gaps between the doors and the thresholds and/or frames. Inspect all exterior doors and make repairs to eliminate all gaps. Clean all soiled ceiling light shields in the main kitchen. Clean the floors & floor drains in the following areas: bar; dishwasher area; by fryers/kitchen 3-bay sink. Facility has date marking system, however, several containers in the walk-in cooler were missing labels. Re-train staff. Soy eggs, a potentially hazardous ready to eat food requiring datemarking, in the sliding door cooler, was beyond the date-marking and required discarding. Eggs were discarded. Facility is washing and re-using single-use food containers. Containers were discarded. Discontinue practice and obtain food grade containers. Replace iced tea and lemonade containers with food-grade pitchers. Prep top lid at cook line is missing bolt/screw. Replace. Sanitizer dispenser at 3 compartment sink is not dispensing at proper concentration. Facility is manually mixing solution. Repair dispenser to use as directed. Observed dishwashing in the food prep sinks. Sinks were cleaned and sanitized during the inspection. Re-train staff. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean the following: Microwave interior and underneath in ramen and cook line; Under prep sinks; Table storing unused microwave – remove microwave if not needed; Beverage bar; Under bowl warmer in ramen. Observed clean food equipment while wet, and not allowing time for draining and/or air-drying. Re-train staff. Observed single-service, single-use articles stored in server area directly on the floor, and not 6 inches above the floor. Lift 6 inches above the floor. The handwash sink in the cook line area was blocked by equipment and not accessible at all times for employee use. Equipment was relocated during the inspection. Back exit door of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Replace door strip. Soap was not available at the handwash sink in the warewashing area. Soap was supplied during the inspection. Paper towel dispenser empty at the handwash sink in the warewashing area. Paper towels were supplied during the inspection. Facility used tap water for sushi pH test. Obtain distilled water. Always comply with approved HACCP plan procedure. Food facility operator failed to post an original, valid Chester County Health Department Certified Food Manager in a location conspicuous to the consumer. Post CFM.

Dry good ingredient storage containers, at the top of the cook line shelves, were not labeled with the common name of the food. Containers were labeled during the inspection. The floor/wall juncture in the restrooms is not coved and closed to 1/32 inch. Install cove base. Sprayer with degreaser taken from bulk supplies in the dishwasher area was not marked with the common name of the chemical. Container was labeled during the inspection.

Murasaki Chester Springs Inc., 475 E. Uwchlan Ave. Chester Springs, January 27. Fail. Raw beef and raw chicken were being stored over vegetables in the two door Beverage Air refrigerator. Manager switched the items immediately. Ensure raw meats are stored below vegetables to ensure there is no cross-contamination. Sprouts and noodles were stored in containers in the walk in without covering. Cover food items to ensure there is no contamination. Manager covered the foods immediately. Sushi rice is being held for four hours and then discarded. Log was written today but there were no logs for the past days. Facility needs to maintain temperature logs for the rice. Ice machine had residue built up on the sides and on the drop pan. Clean ice machine immediately. The following non-food contact surfaces need to be cleaned: The floor under the fryer had grease and food scraps. Clean underneath and maintain. Around the handwash sink at the sushi station needs to be scrubbed and cleaned. Handwash sink next to the cookline had a container of wiping cloths in it. Handwash sinks should be used for handwashing only and kept free of any other materials. Remove immediately. Cardboard is being used as a shelf liner in the shelving unit next to the dishwasher. Cardboard should not be used since it is absorbent and not durable. Replace cardboard with a liner that is smooth, durable, and easily cleanable. Transport wrap was still left on the undercounter cooler in the sushi area. This should be removed as it is not an easily cleanable surface.

Panaderia Y Taqueria Morelos, 835 W. Cypress St. Kennett Square, January 27. Fail. Clean the inside of the ice machine and the slicer. Lids to septic tank out back was off and it appeared that a bucket of greasy water was going to be dumped in to the tank. The bucket was frozen solid and was not dumped in the tank. DO NOT dump any grease into those tanks. Keep lids closed. An additional food manager for the restaurant is needed; truck has CFM.
