Food for Thought: 2 low performers this week, plus 3 top performers

LUBBOCK, Texas (KCBD) – From a chicken joint to a sandwich shop, we have two low performers on the list this week.

And The Golden Arches get a gold star this week, plus two others.

We start though with this week’s violations.

Potbelly Sandwich Shop at 6616 Milwaukee had 19 violations.

Here’s a look at their priority violations.

* Multiple food items were above the safe cold temperature of 41 degrees, including: chicken, lettuce, hummus, tomatoes and boiled eggs.

* Meatballs were not at least 135 degrees.

* Chicken was held past its use-by date.

* There was no thermometer in the reach-in cooler.

* Tongs were on a hand sink. Hand sinks are for hand washing only to prevent cross contamination.

* Several food containers and lids are damaged. They must be kept in good repair.

* The report shows, the person in charge was knowingly using a walk-in freezer and a reach-in cooler that were not maintaining proper temperature.

* The ambient temperature of the walk-in freezer was 46 degrees.

* Food items in the reach-in cooler were 49 degrees.

* A not-in-current use wiping towel was stored on top of the reach-in freezer lid between uses.

* A metal food scraper with black handle was stored in the space between food containers inside the reach-in cooler top cold holding area between uses.

* A metal food scraper with black handle was stored between the white cutting board and the silver panel of a not in current use reach-in cooler surface between uses.

* Reach-in freezer with ice cream storage was visibly soiled with spills on the bottom surface.

The report shows most of the violations were corrected at the time of the inspection.

Dirk’s at 1636 13th had 16 violations.

Here’s a look at their priority violations.

* Egg wash was stored above ready-to-eat peppers.

* Raw bacon was stored over ready-to-eat carrots and brussels.

* A Bloody Mary mix was held past its use-by date.

* An employee used their bare hand to turn off the faucet at the hand sink. A barrier, like a paper towel, must be use to prevent cross contamination.

* The sanitizing solution was not strong enough.

* Testing devices for the sanitizing solution were expired.

* A spray bottle was not labeled.

* Top rack of cart holding blanched fries and zucchini was uncovered in walk-in cooler.

* Hand sinks throughout facility not sealed to their adjoining wall.

* Two ice buckets stored on top of ice machine not covered or inverted.

* Single-use cups used as scoops in bulk sugar and bulk rice containers, stored in dry storage area.

* Vent shrouds in walk-in cooler had an accumulation of dust.

* Deflector plate of ice machine had an accumulation of black debris on the nonfood-contact surface.

* Employee personal food stored on shelf above food service items in walk-in cooler.

* CFM certificate not posted in conspicuous location.

* Hand drying provisions dispenser and hand washing cleanser dispenser posted at dump sink.

The report shows all violations were corrected at the time of the inspection.
